Sausage Frittata

METHOD

1.    Cut potatoes into slices of 2mm thick, and deep fry in hot oil. Remove from the oil when golden and fry with onions in a separate pan.

2.    In a bowl mix the eggs with all the other vegetables, herbs, Ranchers Beef Sausages and grated cheese.  Season to taste.

3.    On a pie tray, make the Lyonnaise potato base by laying the potatoes flat, covering the whole tray. Season well with salt and pepper.

4.    Top with the eggs mixture and bake at 150degreese for 12minutes. Serve immediately whilst hot.

INGREDIENTS

4 eggs

150g mozzarella cheese, grated.

100g peppers

100g red onions

300g Ranchers Finest English style Beef Sausages

2tbs cooking oil

1/4 bunch chopped parsley
