Peppery Roasted Chicken Sausages

METHOD

·       Preheat the oven to 180 Degrees Celsius / Gas number 4

·       Add the potatoes, onion, peppers, and garlic to a glass baking dish. Sprinkle with the herbs, chilli flakes, salt, pepper, cooking oil. Toss together to mix well. Nestle the sausages into the vegetables.

 

·       Bake for 30-35 minutes until vegetables are tender and cooked through and starting to brown.  If the vegetables aren't browning, place the munder the grill for 3-4 minutes to brown.

INGREDIENTS

·       500g pack of RanchersFinest Chicken Sausages

·       500-600g chopped Irishpotatoes, (You can also substitute with chopped sweet potatoes)

·       1 large onion,chopped

·       2 red peppers

·       1 green pepper

·       1 small squash,deseeded and diced

·       4 garlic cloves,minced

·       1 tbsp dried mixedherbs or a sprig of fresh rosemary.

·       1/2 tsp. chilli flakes

·       2 tbsp of cooking oil
