METHOD

1. In a skillet melt the butter and add in flour stirring well to avoid lumps.  

2. Then pour the milk and all the spices and stir until thickened and smooth.  

3. Remove from the heat and cover with cling film and allow to cool.
Meanwhile toast the bread slices on both sides.

4. Fill the bread with some of the béchamel sauce,
add a slice of ham, spread on a little mustard if desired, and cover with grated cheese.

5. Cover with the second slice of toast and spread on more of the Béchamel sauce, sprinkle with cheese and bake at 400°F (200-220°) for 10 minutes.
