Chicken sausage frittata with potato hash brown crust

METHOD

1.    Cut potatoes into slices of 2mm thick, and deep fry in hot oil. Remove from the oil when golden and fry with onions in a separate pan.

2.    In a bowl mix the eggs with all the other vegetables, herbs, Ranchers Beef Sausages and grated cheese.  Season to taste.

3.    On a pie tray, make the Lyonnaise potato base by laying the potatoes flat, covering the whole tray. Season well with salt and pepper.

4.    Top with the eggs mixture and bake at 150degreese for 12minutes. Serve immediately whilst hot.

INGREDIENTS

*4 eggs
*5 PCs fried chicken sausage, sliced
*Red and yellow peppers sliced 1pc
*2pcs Red onions sliced
* 200gms Oyster mushrooms (local)sliced  fried
*Parsley chopped
*Black pepper
*Salt
*1/2 Cream
*25gm Butter
*100gm grated cheddar cheese
*1/2kg Fried sliced Irish potato with skin on
45 cm Aluminum foil paper
*Baking tray
